Recipe:

Bottling dry beans

Pressure canner

Large pot of boiling water (water will be used to pour over beans in the jars.)

7 quart jars, lids rings etc.

Wash and clean jars and rings in hot water, rinse in hot water (this can be done in a dish washer if you have one.) Boil the lids and leave in the hot water.

To each quart jar add 1 and 1/3 cup dry beans. (As in Red, pinto, navy)
Add 1-teaspoon salt

Fill the jar within 1 inch of top with hot water.
Place lids and rings on jar and tighten rings.
The beans will swell during this next process so don’t add extra beans.
Process in your pressure canner for 1 hour on 15 pounds pressure (60 minutes).
Let the jars cool and lids should give a pop sound when sealed.
This recipe was given by Maxine Powell years ago. 

We have gotten the frost free faucet dug up in the barn, I should say Dave has. The part that connects the faucet to the water pipe was busted. So thats all fixed and ready for winter.

Our son T helped finsh the last 2 places in the barn that needed to be jacked up and braced. That was great for me :).

Someone is giving us 10 gallons of tomatoes which i will make sauce out of and can. Good thing cause the few we have are still green. It was just to cool this summer for ours to do well.

  1. So much progress in your home. Simply wonderful! I must say your dried beans canning is right on TIME - Sometimes I would really just like to crack open a jar of beans and meat and make a 15 minute chili bean to go with some hotdogs. Thanks LADY! :)
