More Snow & Beaten Biscuits

Here are a couple of old recipes.

Beaten Biscuits. This is from the 1700's
(If you what to add a tablespoon of sugar go ahead, but this was made without the sugar.) Mix together
5 cups flour
1 cup lard
1 teaspoon salt
1 teaspoon baking powder
After all is mixed well beat with a hammer until blistered. Shape into biscuits and poke tops with fork Bake 400 deg for 15 min. or till golden. Makes 35 to 40 biscuits depending on size, brush tops with melted butter.

Swiss Cheese Potato Bread
1 cup very hot water add, 1/4 cup instant potato's
let cool to luke warm then do the yeast water.

1 package or 1 tablespoon yeast, add
1/2 cup warm tap water
Let set 5 minutes then
1/2 teaspoon salt
1 tablespoon sugar
mix then add
5 tablespoons melted butter
2 eggs beaten
1 cup grated Swiss chess, sometimes I use mild cheddar cheese
Turn out on floured surface and knead well. Allow to raise. Punch down and put in a bread pan or roll round and out in a tube pan.  Let raise again and bake 45 to 55 minutes at 350 deg.

We got another 8 inches of snow but things are supposed to melt down some with 40 plus degree temperatures coming in, in a day or two.

Dave plowed last night after he got home from work and before he had supper.

Kathy was hired today and starts tomorrow, she is very happy.
