Ice, Snow, Thaw, Snow, Thaw, Ice, Snow

We seem to have a slippery weather pattern here.  But at least we are getting moisture I guess.  Today we will have some thawing again with rain and freezing rain and then the weekend with a cold front and snow again.
 We ended up with 10 to 12 inches of snow above this ice sheet. One tends to get a nasty surprise when you aren't careful when walking.
We ended up with freezing rain Monday night again but on top of the snow this time.

I have been trying to come up with more handouts for Church on being self sufficient and for food storageI try to have a hand out for every Sunday but I may have to make that more like every other Sunday.
I make sure I use the site addresses when I use articles from the internet sites I find things at.  
I think maybe it is time to repeat some of the important ones from a few years ago for those that have moved in, in the the past few years. 
I have asked them to put these in a three ring binder.  I do the holes for that to make it easier :).

A Stormy Week

We had a pretty good blizzard here today.  Than turned to sleet for a few hours and this evening it has all stopped :).

Supposed to be like this all week with high winds to boot.  It;s not going to get quite as cold as they thought a few days ago. GOOD.

Dave and I went to the Temple for Valentines day, that was really nice.  Long trip up and it always tires me out but its a good tired.

We haven't seen our youngest son Kh for over a year and he and his wife A are supposed to be here for a couple of days in the middle of March the 18th.

18 inches of snow & warm up a comin

We have a good 18 inches of snow but there is a warm from headed in this week so it won't last long.

DH is home ill today.  He said there are lots of folks coming into work at the city sick.  Helps to spread things around :(.

Me I just plain feel tired out.  Been that way for a few days.  But nothing unusual with me.

Our mid 20's youngest daughter had a ear infection and ended up with Bells' palsy on the left side of her face; she is much better this week.  Which she is very grateful for.

Make extra to freezer or turn into things like re-fried beans for burritos and such. But it doesn’t stop there. Even with the re-purposing and freezing anything that’s enough for another family meal, one can end up with little bowls of leftover beans.

More interesting ways to use up those cooked beans. Hope you find some ideas you can use to stretch your meals and get more healthy legumes into your diet.

  • Sprinkle some cooked beans on your salad. Black beans and Garbanzo beans are a favorite around here, but any type of beans will work.
  • Use them in spaghetti sauce instead of meat. You end up with a frugal and healthy meal that’ll fill you up.
  • Grind up various leftover beans and turn them into a dip. Season with spices, garlic etc. to taste. We love this for dipping tortilla chips, carrots and even as a spread for burgers and sandwiches.
  • Grind up cooked beans and mix them in with ground beef to stretch it in burgers, meat loaf etc.
  • Throw some cooked beans and pot liquor (the cooking liquid from the beans) into a blender. Refrigerate the mixture and use it to thicken soups and stews while adding more nutrients.
  • Throw the leftover cooked beans into your next pot of soup or combine them with various other leftovers hanging out in the fridge to make a casserole.
  • Stir some black, pinto or kidney beans into your next batch of homemade salsa for added flavor and crunch.
  • Mix your leftover beans with some cooked rice. Season with a bit of cumin and you have a delicious side dish.
  • Replace half the oil in your favorite cake or brownie recipe with mashed up beans.
  • Throw some beans into your next smoothie for added thickness, texture and nutrition. If you have seasoned beans, rinse off any liquid they were cooked in to remove as much salt and seasonings as possible before using them in your smoothie.

Where did the years go?

Hit another mile stone birthday today. Just unbelievable sometimes.  Wasn't I just turning 30 the other day?

We have quite a few Birthdays in Feb.  I just found out a grand nephew has a birthday today also.

We got a cold front back in and it looks like it's supposed to snow all week again.  Here is a few pics this week.  These were taken before we received more snow.

The first two are par of the back yard.  On the left edge of the first one you can see a trash can with snow pushed into it lol.  Kay was trying to fill it up.

Recipe:

 
Pineapple cheese salad: This is from Great Aunt Ella Walker Antigo Wis. born 1908.
She gave this to me 30 or more years ago
1 level tab. gelatin
¼ c. cold water
½ c. boiling water
2/3 c. grated shredded cheese
1 c. crushed pineapple
1 tab. sugar
Dash salt
½ cup cream – whipped
Soak gelatin in cold water for about 5 minutes, then dissolve in boiling water. Add sugar, salt and pineapple. When it begins to stiffen fold in cream and cheese.
