I have been Canning, Drying & Recipes

 It's cooler today, really nice :). Great time to do canning.

Just found out yesterday that I have to have surgery on my left foot; a cyst that has hurt for over a year has to come out. Ack




Dried carrot tops, beets greens, savory, rosemary, lemon balm, lemon verbena, sage, lavender, tarragon, oregano

Recipes:

Applesauce bread
Makes 4 loaves bake 350 deg. 50 to 60 minutes
3 c. applesauce
3 c. oatmeal
1 ¼ c. margarine or butter
1 ½ c. sugar or 2 c. honey
4 eggs
2 ½ c. whole wheat flour
2 ½ c. white flour
2 tsp. baking soda
2 tab. cinnamon
½ tsp. cloves

After poured in pans run a sharp knife down the center of the loaves. Bake, then cool 10 minutes then turn out of pans.

Fake Pecan Pie (Depression era)  
2 eggs 
¾ cup sugar
¾ cup dark Karo syrup
¾ cup oats
¼ teaspoon salt
¼ cup butter melted
1-teaspoon vanilla
1 unbaked pie shell.
Beat eggs well, add remaining ingredients, fold in oats last.  Pour in pie shell and bake, 350 for 30 to 35 minutes.

 Acorn squash with apples
3  acorn squash
½ c. water
1/3 tsp. salt
3 tart apples
butter
6 tab. brown sugar
¼ tsp. nutmeg
Cut squash in half, remove the seeds and clean. Put them cut side down in a greased cake pan or baking dish, add water. Bake 350 deg. 10 minutes, turn them. Peel and core the apples cut up mix with spices and fill squash with the apples and spices. Pour another ½ c. water in the pan bake 30 minutes.

Long days

Well the barn is finished; it's good to have that done.  
There are still fences to be worked on and lots of other odd things that need done besides wood cutting and splitting.  We're getting to that last one late.

We pulled the beets this last weekend and boiled them in a big tub last night.
I got the fire going before Dave got home and we did them in 2 batches.  Of course the 2ed one never takes as long to boil as the water is already hot from the first one.

 

 


Recipe

Another Spanish Rice

2 tablespoons olive oil
2 tablespoons onion chopped
1 1/2 cups uncooked rice
2 cups chicken broth
1 cup water
1 cup salsa or tomato sauce
Add oil to a large skillet. Add the onion and cook until tender, around 5 minutes.
Add rice to the skillet, stir often. When the rice begins to brown stir in the chicken broth, water & the salsa. Lower the heat and cover with a lid and simmer 20 to 30 minutes, or until liquid has been absorbed into the rice.

August WOW

Dave took a weeks vacation this past week to get some things done around here. Fences, garden work, painting, barn cleaned and on and on.



Ladder that was in the living room now the barn ladder bolted the the walkway.

Three grandsons came up to help with fencing on Thursday and son and grandsons Saturday afternoon. Grand dad teaching them what it is all about.

Recipe

Sweet Butter crackers
3/4 cup butter
4 cups flour
 3/4 cups sugar
2 eggs, beaten
Mix butter into flour. Add the sugar and then eggs. Make into paste like dough. Roll very thin and cut with cookie cutter or top of a glass. Lay on a cookie sheet. Prick these with a fork. Top with caraway or a egg white wash and dust with a bit of sugar. Bake 325 deg oven 8 to 10 min. or more depending on how crisp you like them.
