5 Gen. Picture, Recipes

Well here is another April under our belts :).


That didn't seem to take long now did it?


Rained like a son of gun this morning but we have a bit of sun peeking out now and then. 


Dave sprayed the weeds on Saturday I sure hope that gave them enough time to get to dying lol.


Our first great grand baby was born last week on the 26th of April, Jaydah.


We did manage to get a 5 gen. Picture. 


Baby 2 days old, grandma 39 yrs, great grandma 58 yrs, great great grandma 82 yrs.


Here are this weeks recipes.

1958 recipes

Here’s one called:

Apple Nut Pudding
1 well beaten egg
Add: ¾ cup sugar. Stir until sugar is dissolved.
Sift together
½ cup flour
½ teasp salt
1 teasp.
Add to egg & sugar, then add:
½ cup chopped nuts
1 cup finely chopped apples
1 teasp almond extract
Mix well. Bake in 350 degree oven for 35 to 40 minutes in a greased and floured pan 8x8.  When done cut in squares and serve with whipped cream. By Leota D Baird

Quick Oatmeal Fudge
In pot add together:
2 cups sugar
½ cup milk
3 tablesp cocoa
¼ cup margarine
Boil together then remove form heat, add:
3 tablesp quick cooking oatmeal 
1 teasp vanilla
½ cup chopped nuts or coconut
Stir until almost cold. Drop by spoonfuls on a cookie sheet, chill. (Unsighed)

Pineapple Ginger Punch
½ cup sugar
2 cups water
1 cup pineapple juice
1 cup grapefruit juice
¼ cup lemon juice
4 cups ginger ale
Boil sugar and water together for 5 minutes: cool. Add fruit juices and chill thoroughly. Just before serving add the ginger ale. Any sweet juice can be substituted for the pineapple juice. One-half cup lemon juice may be substituted got grapefruit juice. 40 servings. By Roxie Parkin

Grand kids Chores and Old Recipes

We had sort of a busy weekend, two for the grand children were here so that made things a bit busier with their help lol. They loved helping with hauling away branches but Kaylee used them to play n the creek.





Then they went to see what the calf was up to and she wanted to play.




Tire rotation time.




Recipes from a 1958 Relief Society Cook book Lewiston and Clarkston.

French Dressing

3 tablesp grated onion or 1 clove garlic
1 teaspoon salt
1 teasp paprika
½ cup oil or salad oil
1/3 cup catsup
¼ cup vinegar
Juice of ½ lemon

Place in covered jar and shake well. Remove garlic glove after an hour) Pour over favorite tossed salad.

Molded Cheese Salad

2 packages jello
4 cups boiling water
1 cup cream
1 cup nuts
2 cups crushed pineapple
1 cup grated cheese

Mix water and jello and chill until slightly set. Whip jello, add cream, nuts, pineapple and cheese and put in a mold chill.

Salmon Salad

1 can salmon
½ doz. Cracked rolled and crushed
6 boiled eggs
1 tablesp finely chopped sweet pickles (Now sweet pickle relish)
1 onion chopped fine
1 Tablesp table mustard

Chop whites of eggs. Mash eggs yolks then add with mustard, add other ingredients, you can add a touch of vinegar if you wish.

Lemon Curd Sandwich Spread

6 eggs
6 lemons
Grated rind of 3 lemons
1 pound butter       
2 pounds sugar (2 cups)

On stove melt butter and sugar together, add grated rind and juice from the lemons. Add beaten eggs, slowly stir until thickens.

Recipes and Etc.

 I have a new page above on the Indian Fire cooking hole. I may move it to its own Blog sometime so I can add more camping and cooking ideas.

Here we are in another week. April seems to be slipping by quite quickly.
Rain is on the way in here for today and most of the week according to the weather people. It will be in the 40's today.

Dave got some of the gravel back up onto the driveway and got it drug on Saturday afternoon. He made himself a drag box and stuck a huge piece of tree in it for weight. He had spent the morning in town opening the Church building for adult co-ed volleyball and then taking everything down and putting it away to do a few errands in town afterwards.
I believe next weekend he is going to break out the chain saw and cut up that huge tree limb from a Mountain Maple that took out a section of our garden fence.No other way to get it out from across it.

I found the calf wandering around the farm truck last week. It was still early morning and I was still in my bath robe. I look out the living room window and there she is on the wrong side of the fence.
I had to bribe her back to where she belongs with a bucket of grain. We am still trying to figure out where she jumped out of her pasture. I thought OH NO we sure don't need this to start.

Here are a couple more recipes from our area in 1958.

Mexican Wedding Cake (More like cookies)
2 cups sifted flour
1/8 teasp salt
3/4 cup butter or margarine
4 Tablesp powdered sugar
2 teasp vanilla
1 teasp cold water
1 cup finely chopped nuts
Sift flour, measure and sift again with salt. Crea, butter until fluffy the add the 4 Tablesp of sugar, vanilla and water. Mix thoroughly. Stir in flour and nuts. Shape in rolls 1 & 1/2 inches in diameter.
Wrap in waxed paper and chill. Slice in 1/4 inch slices and bake in 400 degree oven for 6 minutes or until slightly brown. Roll in powdered sugar while hot. By Eudella Williams

Applesauce Cake
2 cup flour
1 cup sugar
2 level teasp baking soda
1 heaping teasp cinnamon
1/2 teasp nutmeg
1/2 teasp ground cloves
1 level Tablesp cornstarch
3 level Tablesp cocoa
1&1/2 cup applesauce
1&1/2 cup raisins
1/2 cup shortening
1/2 cup nuts
Cream shortening and sugar, add rest of ingredients. Mix well place in oblong greased pan. Bake in slow oven 325 degrees about 2 hours. Check as you need. By Leona Larson

Old Recipes & weather


We have run the gambit I tell you.  Last week after the 36 plus inches melted off we had 2 really nice days before we were hit again with snow.  


If I can get a few days of dry weather I am going to dig a 2 hole Indian fire and take pictures as we go along and then using it to post here with instructions.


This last Friday we had several inches of new snow and Dave was sledding with Kaylee in the back yard.




The snow has pretty much melted off the last 3 days and it is in the 50's today but we have rain storms headed in tonight and for the new few days. 


The new snow man fell over yesterday afternoon and there is only like 18 inches of him left.


I got to hang the clothes up yesterday to dry, that was so nice. Dave helped take the loads off the line before it got dark.

Recipes


Here are some recipes from an 1958 local cookbook from the ladies in the area.


Rice Muffins
1 cup cold cooked rice
2 eggs, well beaten
3 Tablesp baking powder
4 tablesp melted shortening or butter
2 tablesp sugar
1 & 1/2 cup flour
1 cup milk
Sift flour, measure and sift with baking powder and salt. Combine rice, milk, eggs, shortening and sugar. Add dry ingredients and beat until smooth. Fill well greased muffin tins to 2/3 full. Bake in hot oven (425 deg) about 30 min. By Roxie Parkin


No Knead Rolls
1/2 cup vege. oil
3 eggs beaten
1/3 cup sugar
4 & 1/2 cups flour
2 tablespoons yeast
1 cup warm water
1/2 teaspoon salt
 In large bowl but yeast in warm water and let sit 5 minutes. Stir in other ingredients let rise 1 hour. Shape and put in pans or cookie sheets. Bake at 400 degrees 15 minutes. By Pauline Jacobs


Gingerbread
1/2 cup shortening
1/2 cup sugar
1 egg
2 & 1/2 cup sifted flour
1 & 1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teasp ginger
1/2 teasp ground cloves
1/2 teasp salt
1 cup molasses
1 cup hit water
Cream the shortening and sugar. Add egg and beat until fluffy. Sift all dry ingredients add to liquid and stir until smooth. Bake in a square pan at 350 deg. 30 to 40 minutes. By Virginia Hollingsworth

Snowing again

We had another day of snow, 7 new inches of snow then we had a bit of melting now tonight back to snowing.
Only 50 % chance of snow tomorrow Thursday.
Dave's on his way home from meeting tonight, he called to say it was raining in the valley.


Food Storage:


Where does one get the money for storage?


1. Decide as a individual, couple or family if you could use some of that Christmas money for later in the year could be used instead for food storage or other preparing items. Same on what you may spend on Birthdays.


2. Planning on new clothes or shoes but what you have is still good, don't buy them and put the money into storage items.


3. Skip vacation or take a camping trip close by for your vacation and use that saved money for storage.


4. The money you would have used to go to the movies, skip the movie and use it for storage.


5. Watch for specials at the stores, I know that is getting harder as prices go up. But do the best you can.


Recipe:


Pinto Bean Dip


1/2 med. onion, minced
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 to 1/2 cup picante sauce, depending on how much you like.
2 cups mashed pinto beans
1 cup grated cheese
1/2 cup diced tomatoes
Mix and heat this completely, add cheese if desired. Serve this hot with chopped onions on top and tomatoes.

Note:

Just saw on TV report that real vanilla and vanila beans are going up in price by at least 10%.
